Abstract:
Genes coding for glycosyl hydrolases are claimed, where the glycosyl hydrolases, when subjected to hydrophobic cluster analysis (HCA) together with Alteromonas fortis iota-carrageenase, give an HCA score of at least 65% over the domain between positions 164 and 311 of the amino acid sequence of the iota-carrageenase (a defined sequence of 559 amino acids given in the specification).
