Abstract:
PROBLEM TO BE SOLVED: To provide a method for adding calcium, not causing a trouble on manufacturing such as clogging of a piping even when adding calcium to a raw material to be subjected to extruder-treatment, and to provide tissue soybean protein having weak grain smell and strong hardness and resilience.SOLUTION: A method for manufacturing tissue soybean protein includes: a step of adding an aqueous solution of calcium lactate to a raw material containing a soybean protein material; and a step of heating/compressing with an extruder the raw material added with an aqueous solution of calcium lactate. In the method for manufacturing the tissue soybean protein by heating/compressing with an extruder the raw material containing a soybean protein material, a method for weakening grain smell of the tissue soybean protein thus obtained and making hardness hard and resilience strong includes adding an aqueous solution of calcium lactate to the raw material.SELECTED DRAWING: None
