Abstract:
To perform extrusion molding of buckwheat noodles more surely in a shop, while being handled easily in conveyance to the shop.SOLUTION: A buckwheat noodle dough is formed into a rectangular parallelepiped shape in which a length of one side is 4 cm to 12 cm respectively. When a temperature of the buckwheat noodles is 14 degrees to 24 degrees, power agrees with hardness of 14 N to 26 N, which is required for thrusting a probe in which the shape of a surface in contact with the buckwheat noodle dough is a circle having a radius of 10 mm, into a depth of 15 mm from the surface of the buckwheat noodle dough.SELECTED DRAWING: Figure 5
