Abstract:
To provide a flavor enhancing method of perilla as a seasoning; and to provide a seasoning in which flavor of perilla is enhanced.SOLUTION: In a flavor enhancing method of perilla as a seasoning, concerning a seasoning containing a leaf of perilla and a component A, the component A is included as much as such an amount that the acidity expressed in terms of acetic acid derived from the component A is 0.3-3.0.
