Abstract:
To provide a method for preventing garlic from turning greenish, capable of preventing a color tone of garlic from changing to greenish even in the case of making a product by mixing green onion which causes garlic turning greenish.SOLUTION: A method for preventing garlic from turning greenish as a method for preventing garlic from turning greenish in food which contains a garlic ground product, and a ground product of an edible part of a plant of Amaryllidaceae excluding garlic includes subjecting a low pH treatment so as to bring the pH to less than 4.3 before mixing the ground product of the edible part of the plant of Amaryllidaceae excluding garlic with the garlic ground product.SELECTED DRAWING: None
