Abstract:
To provide a production method of seasoned cod roes, capable of enhancing a particle feeling.SOLUTION: A production method of seasoned cod roes includes thawing frozen cod roes by using immersion in thawing liquid, and immersing the cod roes after thawing into salting liquid. The thawing liquid contains 1.0 mass% or more and 15 mass% or less of salt based on the thawing liquid, and 92×10-5 mol or more and 34×10-3 mol or less of calcium salt as calcium based on 100 g of the thawing liquid. The calcium salt is a mixture of one kind or two or more kinds selected from a group consisting of organic calcium, inorganic calcium, calcium hydroxide, calcium oxide and burning calcium, and a temperature of the thawing liquid is adjusted so that a center temperature of the cod roes becomes 10°C or less in the completion of thawing of the cod roes.SELECTED DRAWING: None
