Abstract:
PURPOSE:To obtain a processed noodle-like food of TOFU having high strength and elasticity, strong glutinousness and excellent taste and texture, comprising TOFU, carrageenan as a gelling agent and water. CONSTITUTION:Carrageenan as a gelling agent is blended with water, heated, mixed with TOFU, stirred into a suspension, then the suspension is solidified and the prepared solid substance is made into a noodle shape by a pushing machine to give the objective noodle-like food having improved texture and properties. The food preferably consists of 1-7wt.% (calculated as solid content) TOFU component, 0.2-4wt.% carrageenan and a necessary amount of water. Further the food is preferably mixed with 0.05-2wt.% locust bean bum additionally.
