Abstract:
PROBLEM TO BE SOLVED: To produce a wine having a unique aroma possessed by a white wine and scarcely changing the aroma during a preservation period and to provide a method for producing the wine. SOLUTION: This method for producing a wine comprises adding polyphenols in a step for producing the wine using a fermentation raw material containing a fruit juice of grapes for a white wine. The white wine contains >=750 mg/L polyphenols and the wine contains geraniol, nerol or citronellol and further >=750 mg/L polyphenols.
