Abstract:
PROBLEM TO BE SOLVED: To provide a new method for producing fermented soybeans having a mellow fragrance appreciated by every body so as to further expand the demand of fermented soybeans. SOLUTION: This method for producing fermented soybeans is characterized in that, in fermenting soybeans fermented with Bacillus natto, 1-5 ml of a solution suspending yeast is previously injected to the bottom of each container for fermented soybeans, boiled soybeans sprayed with Bacillus natto are piled up in the container and fermented.
