Abstract:
PROBLEM TO BE SOLVED: To provide a flavor improver excellently improving the flavor of food and drink, to provide a method for improving the flavor, and to provide food and drink using the improver.SOLUTION: The flavor improver includes a sugar amino compound complex obtained by heat treating (a) a sugar composition which contains branched oligosaccharide having glucose as the constituent sugar, and at least α1,6 bond, and (b) an amino compound with a molecular weight of <1,000. The method for improving the flavor of the food and drink includes adding to food and drink, a sugar amino compound complex obtained by heat treating (a) a sugar composition which contains branched oligosaccharide having glucose as the constituent sugar, and at least α1,6 bond, and (b) an amino compound with a molecular weight of <1,000.
