Abstract:
PROBLEM TO BE SOLVED: To provide an emulsion composition that can be stably emulsified under an acidic condition even by using a sugar ester irrespective of its monoester content, and an acidic food and an acidic beverage comprising the emulsion composition.SOLUTION: An emulsion composition of the present invention comprises a polyhydric alcohol 20-80 mass%, an oil-soluble substance (excluding emulsifiers) 10-70 mass%, and a sugar ester and an organic acid monoglyceride as an emulsifier, and the ratio of the organic acid monoglyceride content (OMG) to the sugar ester content (SE) (OMG/SE) is 0.01 or more and less than 0.6.SELECTED DRAWING: None
