Abstract:
To provide a method for producing an optically active amino acid in the presence of a new isolated 5-substituted hydantoin racemase.
The 5-substituted hydantoin racemase activity-having protein has the following amino acid sequence (a) or (b). (a) A specific amino acid sequence originated from Pasteurella pneumotropica. (b) An amino acid sequence which is obtained by substituting, deleting, inserting, adding or inverting several amino acid residues for/from/into/to/in the above amino acid sequence.
