Abstract:

To provide glossy acidic gelled food containing collagen peptide and at least one selected from agar, gellan gum, carrageenan, and locust bean gum, and has pH 3.5 to 4.5.

The acidic gelled food contains the collagen peptide and at least one selected from agar, gellan gum, carrageenan, and locust bean gum, and has pH 3.5 to 4.5. The acidic gelled food contains hyaluronic acid and/or its salt, and contains 0.8-50 pts.wt. of sodium based on 1 pt.wt. of the hyaluronic acid and/or its salt.
