Abstract:
To obtain a composition for the coatings of tempura (Japanese deep-fat fried food), good in decorativeness and capable of improving the texture of the tempura by compounding grain flour such as wheat flour as a main compo nent with a swelling agent and a diglyceryl fatty acid ester as effective components.
This composition comprises (A) a grain flour such as wheat flour as a main component, (B) a swelling agent (baking powder) preferably in an amount of 1-5wt.%, and (C) a diglyceryl fatty acid ester (the constituting fatty acid contains 8-22 carbon atoms, preferably 16-22 carbon atoms) in an amount of 0.1-5wt.%, preferably 0.5-3wt.%.
