Abstract:
To provide an antioxidant containing an enzyme-treated product of myrobalan, and a composition containing the antioxidant such as fodder, foods and drinks, pharmaceuticals or quasi-drugs.
The antioxidant comprises the enzyme-treated product of myrobalan. Preferably, the enzyme for treating myrobalan is one or more selected from among pectinase, cellulase, hemicellulase, protease, tannase and chlorogenic acid esterase.
