PURPOSE: To produce the title food in improved productivity at a reduced cost, by using a double-pipe nozzle composed of a main pipe nozzle and a small pipe nozzle and simultaneously feeding a mold with a dough material through the main pipe nozzle and with a coloring material or coloring liquid through the small pipe nozzle.
CONSTITUTION: Cavities 2, 2' having the form of shrimp, crab, etc., are formed in a pair of mating molds 1 and the opening part of the cavity of the mole 1 is brought into contact with a double-pipe nozzle 5 having nearly the same diameter. The double-pipe nozzle 5 is composed of a main pipe nozzle 5a and a small pipe nozzle 5b disposed to nearly the semicircular part of the inner wall of the main pipe nozzle 5a in such a manner as to form a crescent cross- section. A dough composition 6a and a coloring material 6b or coloring liquid 6b' are simultaneously and intermittently extruded through the main pipe nozzle 5a and the small pipe nozzle 5b, respectively. The preparation process can be rationally simplified and the apparatus is effective in saving the labor, improving the productivity and reducing the cost.
