Abstract:
To provide apricot jam-containing yogurt in which plain yogurt has rich flavor and smooth and thickened texture, and rich flavor and flesh feeling of apricot are felt in the apricot jam, so that flavor and texture of both components are enhanced with each other by eating them together.SOLUTION: The apricot jam-containing yogurt includes 10 to 25 wt.% of apricot jam and 90 to 75 wt.% of plain yoghurt. The apricot jam has Brix of 40 to 50% and a hardness of 0.6 to 1.6 N at 25°C and includes 18 to 28 wt.% of syrup-soaked apricot and 1 to 5 wt.% of dried apricot. The dried apricot/the syrup-soaked apricot (dry weight ratio) is 0.3 to 0.55. A content of the syrup-soaked apricot which passes through a sieve of an aperture of 12 mm and does not through a sieve of an aperture of 3 mm is 8 to 20 wt.%.SELECTED DRAWING: None
