Abstract:
PURPOSE:To prepare an artificial shark's fin having a nature and palatability close to those of natural shark's fin, at a low cost, by using a chitosan which is a natural polymeric polysaccharide produced from crustacean. CONSTITUTION:Chitosan is suspended in water and slowly added with acetic acid under agitation. Glycerol is added and kneaded to the mixture, deaerated under heating under reduced pressure and dried under ventilation. The obtained chitosan is formed in the form of a plate. The plate is slit into thin strips, immersed in an alkaline solution, thoroughly washed with running water and dehydrated and dried to obtain a dried artificial shark's fin. An artificial shark's fin having a nature and palatability close to those of natural shark's fin and added with an element of health food can be prepared by this process at a low cost.
