To provide a technology to make beans soften effectively while keeping nutrient ingredients and shape of the beans.SOLUTION: An active component of a softening accelerant of beans is cellulase. Beans can be soften effectively while keeping nutrient ingredients of the beans such as protein, dietary fiber and carbohydrates. The beans can be soften effectively while keeping the shape (particle feeling) of the beans.
