Abstract:

PURPOSE: To prepare a boiled egg packed in a bag, having the appearance, palatability and taste comparable to those of freshly shelled boiled egg and having excellent distribution suitability and preservability and to provide a process for the preparation of the boiled egg.
CONSTITUTION: This boiled egg is packed in a bag having stretched bag surface. The volume ratio of the boiled egg to air in the bag is 10:(5-1) under normal temperature and pressure condition. The boiled egg packed in a bag can be prepared by sealing a boiled egg into a bag while keeping the volume ratio of the boiled egg to air to 10:(5-1) and heating for a prescribed period under pressure.
