Abstract:

To provide bread dough capable of obtaining bread with good chewing texture despite being compounded with rich oil and sugar, and to provide a method for producing such bread dough capable of stably and easily producing bread having the above characteristics.

The bread dough is characterized in including sponge cake crumb. The method for producing such bread dough is characterized in including the step of dispersing sponge cake crumb in bakery dough as a base; and/or the step of rolling the sponge cake crumb in the bakery dough.
