Abstract:
PROBLEM TO BE SOLVED: To provide a bread dough capable of producing a bread having soft and moist texture and crispness, and free from sticky taste, without being restricted by the amount of water absorption in the bread dough or the blending amount of fat or eggs.SOLUTION: In a production method of a bread dough, a plastic oil-and-fat composition (1) containing saccharide as a solid content as much as 20-75 mass%, and (2) having a specific gravity below 0.9 is added to a dough obtained by kneading a bread raw material containing wheat flours, water and yeast, and then kneaded. A bread dough produced by the method, and a bread obtained by baking the bread dough are also provided.SELECTED DRAWING: None
