Abstract:
PROBLEM TO BE SOLVED: To provide bread having integrated feeling of taste harmony and physical properties between the bread and a filling and capable of maintaining crispy feeling of dried materials even with the lapse of time.SOLUTION: There is provided bread containing dried material-containing non-aqueous oil and fat filling as materials, wherein the non-aqueous oil and fat filling has following characteristics 1) to 6). 1) hardness (25°C) of the filling excluding the dried materials is 5 to 10×10N/m. 2) an edible oil and fat, a powder seasoning with average particle diameter of 0.5 mm or less and dried materials with major axis of 2 mm or more are contained. 3) solid fat content (20°C) of the edible oil and fat is 5 to 90%. 4) at least salt and organic acid are contained as the powder seasoning. 5) total percentage content of the powder seasoning is 5 to 80 parts based on 100 parts of the edible oil and fat. 6) total percentage content of the dried material is 1 to 50 parts or less based on 100 parts of the edible oil and fat.SELECTED DRAWING: None
