Abstract:
To provide bread having a sufficiently large specific volume and making it possible to feel light and soft food texture while containing a high content of catechin.SOLUTION: There is provided bread containing catechin, in which the bread contains arabinoxylan, and in the bread, the content of the catechin is 0.1-2.2 mass%, and the value of the ratio of the content of the arabinoxylan relative to the content of the catechin is 0.1-5.5 by mass ratio.SELECTED DRAWING: Figure 1
