Abstract:

PURPOSE: To provide a chocolate containing a liquid ingredient, esp. the subject food excellent in molding universality such as flexibility or soft feel, suitable for molding use or chilled confectionery.
CONSTITUTION: The objective food made of a chocolate contains oil component, i.e., 10-85wt.% of a di-saturated mono-unsaturated glyceride (S2U) and a total of 15-90wt.% of a di-unsaturated mono-saturated glyceride (SU2) and tri- unsaturated glyceride (U3) with a di-saturated monilinolate (S2L) content of the S2U being ≥35wt.%. This chocolate is resistant to flexural dough breakage, excellent in moldability and soft feel, and quick in drying, therefore, being suitable for molding use for chilled confectionery.
