Abstract:
PROBLEM TO BE SOLVED: To provide a chou dough capable obtaining simply and stably a chou case having a homogeneous baked color on the surface, the smooth surface, excellent flavor and soft and crispy texture.SOLUTION: A chou dough contains 5-50 pts. mass saccharide to 100 pts. mass grain flours and/or starches, and 10-500 pts. mass acid oil-in-water type emulsified fat composition in which a saccharide content is 2-30 mass% and an oil content is 5-60 mass%. A chou case obtained by baking and/or frying the chou dough is also provided.SELECTED DRAWING: None
