Abstract:
PURPOSE:To obtain a coagulant for TOFU having excellent water solubility, slightly causing reduction in quality, by using a blended agent of magnesium chloride and glucono delta lactone coated with an alkali metal of sulfuric acid. CONSTITUTION:Glucono delta lactone coated with an alkali metal salt or alkaline earth metal salt such as potassium sulfate or magnesium sulfate is used. Coated glucono delta lactone and magnesium chloride are used to give a coagulant for TOFU. The coagulant thus obtained slightly canses reduction in qualities such as solidification or change in color and since water solubility of the coagulant is excellent, workability is improved.
