Abstract:

To provide a coffee flavor modifier, to provide a flavor modifying method, and to obtain a flavor modified food/drink by addition of the flavor modifier.

This flavor modifier comprises mannose as the active ingradient, and softens sharp taste, acid taste or the like of foods/drinks to turn it mild by adding the flavor modifier to foods/drinks such as bread, soy sauce, broth, sweet sake (mirin), soup, coffee, black tea, juice and crude drug.
