Abstract:
To provide a composition for a baked confectionery capable of producing a gluten-free baked confectionery having a taste (moist feeling and soft feeling) and a best-before period equal to or longer than that of a baked confectionery produced using wheat flour.SOLUTION: A composition for a baked confectionery contains cooking rice cooked by adding water content to high-amylose rice, rice flour and fat and oil and contains 1.0-10 mass% of the high-amylose rice, 5-15 mass% of the rice flour and 10-30 mass% of the fat and oil in the composition.SELECTED DRAWING: None
