Abstract:
To provide a composition for a bread having a taste (a moist feeling, a glutinous feeling or the like) equal to or more than that of a bread produced using a flour without using an edible additive agent such as a thickener and capable of maintaining its taste for a longer period as well.SOLUTION: The composition for a bread includes cooking rice which is cooked by high amylose rice with added water, rice flour and fat, and includes 0.5-50 pts.mass of the high amylose rice and 50-99.5 pts.mass of the rice flour based on 100 pts.mass of the total amount of the high amylose rice and the rice flour.SELECTED DRAWING: None
