PROBLEM TO BE SOLVED: To provide: a crack inhibitor for Western confectionery; a production method of Western confectionery including a step of adding the crack inhibitor and bending a heated Western confectionery dough; Western confectionery produced by the production method; and a crack prevention method of Western confectionery.SOLUTION: A crack inhibitor for Western confectionery contains phospholipase. A production method of Western confectionery includes the steps of: adding the crack inhibitor into a Western confectionery dough; heating the Western confectionery dough; and bending the heated Western confectionery dough. Western confectionery obtained by the production method is also provided.
