Abstract:
To provide a croquette-like snack confectionery having texture and flavor like croquette, and a method for producing the same.SOLUTION: A croquette-like snack confectionery includes an inclusion material containing a starchy material, a swelling agent and a solid oil and fat, and a coating containing a bread crumb as an outer cover of the inclusion material; a whole part thereof is baked; the inclusion material and the coating are porous; and a moisture content is 3% by mass or less. The solid oil and fat is preferably a water-in-oil type emulsified oil and fat containing casein and/or caseinate, and the starchy material contains preferably dried potato and potato starch.SELECTED DRAWING: Figure 1
