PROBLEM TO BE SOLVED: To provide a dough of baked food, a baked food, and a method for producing a baked food capable of lowering the sugar content while effectively exhibiting sweetness.SOLUTION: A dough of baked food is composed of a low sugar dough layer, and a high sugar dough layer surrounding the low sugar dough layer, wherein the sugar concentration of the low sugar dough layer is 0-4% relative to the total grain flour weight of the low sugar dough layer, and the sugar concentration of the high sugar dough layer is 4-75% relative to the total grain flour weight of the high sugar dough layer.SELECTED DRAWING: None
