Abstract:
PROBLEM TO BE SOLVED: To obtain the subject composition having anti-cancer activity, hypoglycemic activity and hypotensive activity, and useful as a health food or the like by inoculating Agaricus fungi into a specific relevant culture medium as a mushroom bed and culturing the fungi to produce mycelia.
SOLUTION: This edible mycelium composition is obtained by the following procedure: using, as a mushroom bed, a culture medium for culturing Agaricus fungi consisting of lees resulted from squeezing juice from kale as a kind of cruciferous plant, the culture medium is sterilized without adding any other ingredient to the mushroom bed followed by inoculating Agaricus fungi into the medium and culturing the fungi to produce mycelia and acquire a cultured product; wherein it is preferable that the moisture content of the mushroom bed is adjusted to 70-90 wt.%, and the cultured product is selected from thus produced cultured product itself and treated products thereof (at least one selected from dried product, crushed product, finely crushed product, powdery product, and extracted product).
