ESTER INTERCHANGE OF OIL AND FAT USING IMMOBILIZED LIPASE

PURPOSE: To carry out the ester interchange of an oil and fat free from palm oil in extremely high lipase activity using only a small amount of lipase by using a specific immobilized lipase suitable for the ester interchange reaction in a system containing little water.
CONSTITUTION: A lipase selected from lipases originated from microorganisms of the genus Rhizopus, Mucor, Alcaligenes or Candida is immobilized on a carrier made of a hydrophobic insoluble organic polymer (preferably a copolymer of divinylbenzene and styrene and/or methacrylic acid ester) containing fine pores having an average diameter of ≥10nm and having epoxy group on the surface of the carrier. Ester interchange reaction of an oil and fat free from palm oil with a fatty acid or of two or more kinds of oil and fat free from palm oil is carried out in the presence of the immobilized lipase produced by the above process. The reaction is preferably carried out at 30-70°C while keeping the water content of the reaction system to 100-1,000ppm.
