Abstract:

PROBLEM TO BE SOLVED: To obtain a filling fillable without being restricted by heat resistance of filling and to provide a method for producing the same.
SOLUTION: This filling is obtained by formulating a paste composed of a starch, a saccharide and a tamarind seed gum with oils and fats and aerating the mixture. Especially a paste comprising 1-7 wt.% of the starch, 30-70 wt.% of the saccharide and 0.01-0.1 wt.% of the tamarind seed gum is used.
