Abstract:
PROBLEM TO BE SOLVED: To provide a flavor improving agent for foods and beverages, having colorless or a pale transparent color, almost no taste or smell when added to a food, having a high safety, capable of being produced at low cost and applied widely. SOLUTION: This flavor-improving agent capable of reducing a bitter, an astringent, an acidic, a grassy smelling, a harsh, an irritating, a metallic or a retort taste is obtained by containing a fraction, as an active ingredient, obtained by distilling a sugarcane liquid up until its Brix degree becomes 65, passing the obtained liquid through a column filled with a synthetic adsorvent as a solid carrier and eluting the adsorbed material with a solvent selected from water, ethanol and their mixture.
