PURPOSE: To obtain slightly salted flour of whitebait capable of being preserved for a long time, by boiling raw whitebait with a solution of salt with a specific concentration, followed by drying.

CONSTITUTION: Raw whitebait are put in a bamboo basket or a net with fine mesh and washed with about 3W8wt% solution of salt. The washed whitebait are boiled in about 3W8wt% solution of salt as they are being put in the basket or net, the boiled whitebait are dehydrated, fed to a dryer and dried until they become dry state.
