Abstract:
PURPOSE: A healthy processed food having high nutritive value and no smell of fish characteristic of blue back, obtained by making an extract of the fish with blue back into a solid state such as granule, dried powder, etc.
CONSTITUTION: A fish with blue back such as horse mackerel, mackerel, etc. is subjected to enzyme treatment with protease, a water-soluble part is concentrated to give an extract of the fish with blue back, which is treated with a proper amount of an excipient and made into granules or dried powder, or the extract of the fish with blue back is directly dried by freeze drying, etc. to give powder.
