Abstract:
PROBLEM TO BE SOLVED: To provide a fungicidal composition used for sterilization of foods or food production and processing devices which has an excellent sterilization effect for foods and food production and processing devices, is reduced in the influence on taste and odor when added to the foods, and is suppressed in causation of corrosion against several kinds of metals used for the food production and processing devices.SOLUTION: A fungicidal composition contains 0.05-0.5 pts.wt. of straight-chain polyphosphate having a degree of polymerization of 3 or more, 0.005-0.15 pts.wt. of Sasa albo-marginata essence and 1-4 pts.wt. of a pH adjuster as effective components with respect to 100 pts.wt. of ethanol, and is used for sterilization of foods or food production and processing devices, where a pH of a stock solution is 3.5-4.7.SELECTED DRAWING: None
