Abstract:
To provide a gel-like food easily swallowed while having a high fat content.SOLUTION: A gel-like food contains water, lipid, emulsion and a gelatinizer. In the gel-like food, a lipid content is 20-60 mass% and a gelatinizer content is 0.2-5 mass%. The gelatinizer contains seed-derived polysaccharide and seaweed-derived polysaccharide. The seed-derived polysaccharide in the gelatinizer imparts suitable viscosity [thickness [swallowing properties]] to the gel-like food, and the seaweed-derived polysaccharide imparts suitable coagulation properties [bitten-off properties [chewability]] to the gel-like food, so that the gel-like food becomes easy to ingest even by a chronic obstructive pulmonary disease patient [COPD] with dysphagia.SELECTED DRAWING: None
