Abstract:
PURPOSE: To prevent fats and oils containing a large amount of an SOS type triglyceride in which a saturated fatty acid (S) is bound to the 1,3-positions and oleic acid (O) is bound to the 2-position such as cacao butter or palm oil from graining.
CONSTITUTION: A triglyceride (A2B) in which one of constituent fatty acids is a ≤12C saturated fatty acid (B) and the rest two fatty acids are ≥16C saturated fatty acids (A) is used as a graining inhibitor and contained in an amount of ≥4wt.% based on an SOS type triglyceride therein.
