Abstract:

PURPOSE: To thaw frozen food without boiling by adopting a heating sequence of repeating heating until a prearranged temperature was reached with the use of infra- red temperature sensor capable of sensing the surface temperature of food without necessity of contacting, in the home cooker.

CONSTITUTION: As the first step, food is heated at heating output P, until the ceiling temperature T1 is reached. Next, heating is stopped only by time t1 spent for that heating. As the second step, food is again at a certain heating output P2 until the ceiling temperature T1 is reached. After this process, the heating is suspended by time t2 spent for that heating. This procedure is repeated sequentially. For instance, the surface temperature of food is raised to T1 during the (K-1) step and the heating is suspended only by time tk-1 for that heating. If the surface temperature of food right before shifting to the (K) step stands above any appropriate threshold temperature (e.g. T1=15°C, T2=13°C), the thawing is considered completed.
