Abstract:
PROBLEM TO BE SOLVED: To provide a taste improver which effectively suppresses unpleasant bitterness, harshness and astringency peculiar to a high-sweetness sweetener with a small amount of addition without changing flavor inherent in food, and reproduces the same taste intensity and flavor profile as those when using sugar such as sucrose even if the high-sweetness sweetener is used.SOLUTION: The taste improver for a high-sweetness sweetener including (A) sensory stimulation substance, (B) a quinic acid or a composition containing a quinic acid, (C) vanilla polyphenol or a composition containing vanilla polyphenol, (D) green tea polyphenol or a composition containing green tea polyphenol and/or (E) rosaceous plant polyphenol or a composition containing rosaceous plant polyphenol, is added to food and drink containing the high-sweetness sweetener, so that unpleasant aftertaste of the high-sweetness sweetener is ameliorated and the same taste intensity and flavor profile as those when using sucrose or the like are reproduced.
