Abstract:

PURPOSE: To prepare a hollow cone cake having a paractically inverted V-shaped perpendicular cross-section, by making a raw material of cake consisting mainly of α-starch into one of a spiral or concentric disc, followed by drying and expansion through heating.

CONSTITUTION: A snack raw material having a thickness of 0.7W2.5mm rolled into a sheet shape, consisting mainly of α-starch, is wound and superposed spirally or like an annual ring to give a columnar raw material having practically wheel laminated structure wherein plural raw material layers are made to contact closely with each other. The prepared raw material is cut perpendicularly to the axis to a given thickness to prepare a raw material of a spiral or concentric disc, which is dried and expanded by heating to give a hollow cone cake, wherein a perpendicular cross- section is formed in practically inverted V-shape, the shape has no base, a ratio of height to base diameter is 1:0.2W 1:0.75, and the expanded layers are superposed concentrically or spirally on the uniform thickness of the side wall.
