Abstract:
PURPOSE: To obtain a hollow forming agent providing products having uniform hollows to be readily packed with a filling by producing hollow products such as bread or cake using a composition comprising edible fats and oils, protein, polysaccharide, phosphate, etc., and water in a specific ratio.
CONSTITUTION: A hollow forming agent using a composition comprising 10-30wt.% edible fats and oils (e.g. beef tallow or coconut oil), 1-15wt.% protein (e.g. rennet casein or soybean protein), 1-10wt.% polysaccharide (e.g. locust bean gum or carrageenan) and 0.01-5wt.% phosphate and/or citrate (sodium citrate) and 40-88wt.% water.
