Abstract:

PURPOSE: To provide a candy having low carlogenicity and low caloric value.

CONSTITUTION: This candy contains a hydrolyzed product of a reducing starch having a fermentable sugar production rate of 55wt.% in terms of anhydride after the treatment with α-amylase of human saliva. The hydrolyzed reducing starch contains 80-92wt.% of sugar alcohols having polymerization degree of ≤3 and 8-20wt.% of sugar alcohols having polymerization degree of ≥4 in terms of anhydride.
