Abstract:

PURPOSE: To obtain the subject cake, a liquid center-containing cake, having excellent palatability by adding a specific center to a main body of a jelly cake comprising gelatin, a saccharide, an acidulant, etc., as raw materials.
CONSTITUTION: A liquid jelly (having ≤100,000cps viscosity, amounting to 5-35wt.%) comprising peptide, a saccharide, an acidulant and optionally a sweetener is added to a main body of a jelly cake (having ≤130g hardness) comprising gelatin, a saccharide, an acidulant and a sweetener to give the objective cake. The main body of jelly cake and the liquid center maintain almost equal specific gravities, water activities and degrees of sweetness.
