Abstract:

PROBLEM TO BE SOLVED: To obtain the subject sea algae by washing edible sea algae with a hydrous ethanol solution to reduce the salt content and the unique odor thereof without losing nutrients such as dietary fibers, minerals, pigments (carotenoid, chlorophyll) and vitamins.
SOLUTION: This sea algae is obtained by washing dietary sea algae such as wakame, mekabu, tangle, Hizikia fusiforme, Eisenia bicyclis or Nemacystus decipiens (e.g. raw sea algae, sea algae dried in the shade, salted sea algae, cut wakame) with a hydrous ethanol solution having an alcohol concentration of 10-54 (v/v), pref. 20-50 (v/v).
