Abstract:

PURPOSE: To obtain a rice cracker having regular surface crazing, by applying the necessary amount of steam jet to the pastry of rice cracker after the secondary drying treatment, and cooling and drying the softened surface layer of the pastry formed by the above steam treatment.

CONSTITUTION: The rice cracker pastry 3 subjected to the secondary drying treatment is placed on a mesh conveyor 4, and passed through the steaming apparatus A. The necessary amount of steam is blasted through the plural nozzles 1, 2 attached above and below the conveyor 4 uniformly and rapidly toward the pastry 3 to form a uniform softened layer having a uniform thickness to the surface of the pastry 3 of rice cracker. The pastry is transferred to the transport conveyor 7, and passed through the cooling and drying apparatus B above the buffle plate 5 to effect the slow cooling, and then cooled and dried forcibly by the blower 6.
